Ingredients

  • 1 lb Shrimp
  • 1 lb Scallops
  • 1 lb Cod fillet
  • 1 Onion
  • 2 Celery stalks
  • 1 Carrot
  • 4 Garlic clove
  • 28 oz Tomato
  • 1 cup White wine
  • 4 cup Fish stock
  • 2 tablespoon Olive oil
  • 2 Thyme sprigs
  • 1 Bay leaf
  • Red pepper flakes
  • 1 teaspoon Salt

Instructions

Step 1

Prepare the seafood

Peel and devein the shrimp. Rinse the scallops and cod fillets. Pat all seafood dry with paper towels. Cut the cod fillets into 1-inch pieces.

Step 2

Prepare the vegetables

Chop the onion, celery, and carrot. Mince the garlic.

Step 3

Sauté the vegetables

Heat the olive oil in a large pot over medium heat. Add the chopped onion, celery, and carrot. Sauté for 5-7 minutes, or until the vegetables are softened.

Step 4

Add garlic and spices

Add the minced garlic, thyme sprigs, bay leaf, and red pepper flakes to the pot. Sauté for 1 minute, or until fragrant.

Step 5

Add tomatoes and wine

Add the canned tomatoes with their juices and white wine to the pot. Bring to a simmer and cook for 5 minutes.

Step 6

Add fish stock

Pour in the fish stock. Season with salt and black pepper. Bring the stew to a simmer and cook for 10 minutes.

Add seafood

Add the shrimp, scallops, and cod pieces to the pot. Simmer for 5-7 minutes, or until the seafood is cooked through.

Step 8

Remove herbs

Remove the thyme sprigs and bay leaf from the pot.
