This delicious and comforting lamb and spinach bake is a perfect family-friendly meal. Tender ground lamb is combined with spinach, tomatoes, and aromatic spices, then topped with a creamy cheese sauce and baked until golden and bubbly. Serve this hearty casserole with a side salad or your favorite vegetables for a well-rounded dinner.
Finely chop the onion and mince the garlic cloves.
Heat olive oil in a large skillet over medium-high heat. Add the ground lamb and cook, breaking it up with a wooden spoon, until browned, about 6-8 minutes.
Add the chopped onion and minced garlic to the skillet. Cook, stirring occasionally, until the onions are softened, about 5 minutes. Stir in the cumin, paprika, salt, and black pepper.
Roughly chop the fresh spinach and add it to the skillet along with the diced tomatoes. Cook, stirring occasionally, until the spinach has wilted and the mixture has thickened slightly, about 5 minutes.
Transfer the lamb and spinach mixture to a 9x13-inch baking dish and spread it out evenly.
In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes. Gradually whisk in the milk and cook, stirring constantly, until the sauce has thickened, about 5 minutes. Remove from heat and stir in the grated cheddar cheese until melted.
Pour the cheese sauce evenly over the lamb and spinach mixture in the baking dish.
Preheat the oven to 375°F (190°C). Bake the casserole for 25-30 minutes, or until the top is golden and bubbly.
